“It tastes like Christmas!”

…and there you have it. This granola recipe is pure joy in the morning, afternoon, and it will even satisfy a late night craving. Yeah that good. If had to describe it even further (which I do) I would say it’s kinda sweet and kinda buttery. But then the honey, cinnamon, nutmeg, and dried cranberries blend together perfectly to form this incredible crunchy cluster of joy. Oh! I can’t forget the pecans. The rich nutty flavor of the pecans is the EVERYTHING. So as my girlfriends so eloquently put it, “it tastes like Christmas” and I couldn’t agree more.

  • I’ve learned that it’s best to make this this recipe in a cool kitchen. My apartment can become a sauna on summer days, so if I know that I’m making this I’ll always have the air conditioning running in advance. The reason for this is because when you take the granola out of the oven, you want it to cool and become crunchy  so that you’ll get perfect cluster. In my experience when the kitchen is too warm, the granola will not harden the way it should.
  • Do not add the dried cranberries to the dry ingredients. I like to add these in about 10-15 mins before I take the granola out of the oven. We don’t want burnt cranberries. 


  • I would suggest storing the granola in a sealed container in a cool dry area. If the container is left open, your granola will become soft. It will still be good but you won’t have those nice crunchy clusters.

Total Time 45 minutes


  • 3 cups of old fashion oats
  • 1 cup of pecans
  • 1/4 teaspoon of Salt
  • 1 tbsp of cinnamon
  • 1 tsp of nutmeg
  • 1/2 cup of brown sugar, tightly packed
  • 1/2 cup of honey
  • 1/2 cup (1 stick) unsalted butter
  • 1 tsp vanilla extract
  • 1 cup of dried cranberries


  1. Set oven to 325F
  2. Line a baking sheet with foil
  3. In a large bowl combine the oats, pecans, cinnamon, and nutmeg. Mix the dry ingredients together then set aside.
  4. In a medium saucepan on medium heat, combine the brown sugar, honey, and butter. Cook until the mixture mixture begins to boil, then remove from heat.
  5. Add the vanilla extract and stir well.
  6. Pour the wet mixture over the dry ingredients, a little at a time and mix everything well. Make sure that the dry ingredients are evenly coated.
  7. Transfer to the prepared baking sheet and using a spatula, press the granola mixture evenly into the pan.
  8. Bake in the oven for 20 minutes. Add the dried cranberries and press them down on top of the granola using a wide spatula. Be careful!
  9. Bake for another 5-10 minutes.
  10. Remove from the oven and allow to cool completely.
  11. Once the granola is completely cooled, crumble into pieces and enjoy!
